The other day I was craving something sweet, so I decided to bake some cupcakes. I wanted to take some pics to post on this blog, but I realized that I still have not found my camera amidst all the boxes & chaos since we moved in last month. Sooo...I thought I'd share a few photos of the cupcakes that I baked last year for both of my boys' birthdays. You see, they share the same birthday month {September}, and their birthdays are less than two weeks apart, AND they are 11 years apart {I know that's a HUGE gap in between}! :)
Anyway, last March 2010, I had given up meat & dairy due to health reasons {more on that later}. I was quite sick for awhile, and it had seemed that giving up those things really helped me out immensely with my health issues...so, I went cold turkey and decided to go vegan! Because I have such a SWEET tooth, I was determined to find vegan dessert recipes that did not taste like cardboard or dirt! lol And I have to tell you, that these cupcakes do NOT disappoint!
For my son's 3rd Birthday last year, I baked some chocolate cupcakes with vanilla frosting & sprinkles, and brought them to his pre-school. I made mini cuppy cakes for his classmates, and a regular sized one for the birthday boy. I was laughing because the kiddos gobbled them up, one by one and even asked for more! They did not suspect that these were vegan {no dairy or eggs}. :)
For my older son's birthday last year, I made chocolate oreo cupcakes with vanilla & crushed oreo frosting!!! 1 little cupper for each year = 14 total!!!
These days, although I no longer eat any meat, I did start trying to slowly add dairy & eggs back into my diet. Note that even though I flip-flop between being a vegan & vegetarian, my hubby & kids still eat meat/dairy AND I still cook them regular non-vegan meals.
