A Whimsical Holiday Cake!

Wow, there's just one more week left until Christmas - can you believe it!?!? This holiday season sure went by fast didn't it? In December it's pretty busy over here, because not only do we celebrate Christmas, but we also celebrate my husband's birthday. Today, I'd like to share with you a whimsical holiday cake and a favorite cake cookbook of mine.


I made this "Winter Wonderland" cake for my husband last year, for his December 22nd birthday. Growing up he always had his birthdays combined with Christmas and never had a cake, so I always make it a point bake him a little something each year. This cake was inspired by his story of always wishing for a snowman cake as a child. He never did get that wish growing up, but hey it's never too late {or you can never be too old} to have your wishes come true, right? :)


So I decided to make him this holiday birthday cake from my favorite cake cookbook The Whimsical Bakehouse by Kaye Hansen & Liv Hansen. The authors are a mother & daughter duo based out of New York. I absolutely love this book - I've had it for quite a few years now and have made most of my birthday & celebration cakes from here, and each recipe has always been stellar!


The cake that I made was a two layer white butter cake with raspberry mousse filling, buttercream frosting, white chocolate "snow," and custom chocolate edible toppings - where I used the "melted chocolate relief" method to freestyle pipe each design one by one. I'm not going to lie, this particular recipe was a little labor intensive, but it was so worth it in the end. This was my first time working with "melted candies" as toppings, but I think it came out pretty decent for my 1st time.


This wonderful cake cookbook has tasty cake recipes, with a variety of delicious fillings and yummy frostings! So even if you don't want to work with custom edible chocolate toppings, you can still create fairly simple, bakery worthy treats!
